All right, I know you read "chicken liver" and think, "Is she nuts? Does she think my baby would actually eat chicken liver or avocado? And in the same meal? Baby food, healthy, yes. But would my baby even get it to her lips?" My answer is an encouraging, "Yes!"
This is a great recipe to use if you've recently bought a whole roasting chicken for a family meal, and you don't know what on earth to do with the leftover chicken liver. No need to toss it out or use it for Fido's lunch. This makes a very nutritious meal for your baby.
Prep Time: 5 minutes
Cook Time: 7 minutes
Total Time: 12 minutes
Yield: 3 to 4, 1 oz servings.
Ingredients:
- One chicken liver
- 2 cups low-sodium vegetable stock or water
- 1 ripe avocado, peeled and pitted
Preparation:
- Pour vegetable stock or water into a small pot and bring to boil.
- Thoroughly clean the chicken liver. You will want to discard any fat, skin or connecting tissue.
- Once the liquid has reached a slight boil, reduce the heat.
- Place liver in pot and simmer just until tender, approximately 6 to 7 minutes. Do not overcook.
- Remove chicken liver from pot, reserving liquid.
- Use a food mill or food processor to purée until smooth.
- To achieve desired consistency, add small amounts of the reserved liquid.
Age Appropriate Baby Food, Healthy Options
Though avocado is a great first food for baby, some medical professionals might suggest delaying the introduction of liver until 9 months. Chicken liver does have a high concentration of Vitamin A. Because of that, do not serve liver more than once a week. High concentrations of Vitamin A may lead to Hypervitaminosis A. Talk with your doctor about when you can introduce meats to your baby.
Some babies will especially delight in eating this purée, hors d'ouevre style - spread a little on a cracker for a delightful snack.
